Magic Mix Roasted Vegetables

Ingredients

3 cups of Chopped Mixed Vegetables (we like a mix of Carrots, Bell Peppers, Zucchini, and Broccoli)

2 tablespoons Olive Oil

1 tablespoons Magic Mix spice

Salt and Pepper to taste

Procedure

Preheat the Oven to 425 °F (220°C).

Toss vegetables with olive oil, Magic Mix spice blend, salt, and pepper.

Spread in a single layer on a baking sheet.

Roast for 20-25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.

Serve as a side dish or over quinoa or rice
