2026 Apron Gala Entry from North Market Spices

We’re very happy to share the memorable dish we made for the 2026 Apron Gala attendees. We cherish food as an opportunity to bring people together. It’s exciting and rewarding to make delicious treats, share them with people, and teach others how to make them themselves. For those of you looking to recreate this dish at home, please see the corresponding recipes for Pickled Red Onions, Cilantro Lime Crema, and braised Jamaican Jerk proteins (Jackfruit and Pork/Chicken variants). 

Also, grab a bag of your favorite tortilla chips (I’m partial to the Shagbark Seed & Mill Original Tortilla Chips made in Ohio). 

Once you’ve made those items, line a pan with tortilla chips, sprinkle jerk proteins over them and cover with shredded cheese. Roast in the oven until the cheese has melted. Pull and top with Pickled Red onions, Cilantro Lime Crema, and a dusting of Cotija cheese. 

Feel free to garnish to your taste, maybe throwing in some finely chopped Serrano peppers after pulling the nachos from the oven. Consider making an Arbol sauce with toasted sesame seeds!
