Arrowroot, Powder
Arrowroot is a colorless and tasteless thickening agent used for sauces and gravies. It is a great alternative to flour for those that are gluten-free. Mix a slurry of arrowroot and cold water until smooth. Add to your sauce, gravy, or soup to thicken, and add a glossy sheen. Coat meat and tofu to create a crispy finish when pan-frying. Do not use in recipes with dairy, an unpleasant slimy texture is the result.
Arrowroot powder can be substituted for flour thickeners at a ratio of one teaspoon of arrowroot powder for every one tablespoon of flour, and for cornstarch in most recipes at a ratio of two teaspoons of arrowroot powder for every one tablespoon of cornstarch.
