Mace, Blades

Blades are the “whole” version of Mace, the outer skin of a Nutmeg. Mace has a warm, fragrant, and slightly spicy flavor, similar to nutmeg but more delicate and sweeter. It is often described as a blend of cinnamon and pepper with citrus and floral notes. Whole mace blades are frequently used to flavor soups, stews, and cream-based dishes, typically being removed before serving. To use blades, grind blades to a powder.
