Brine, Spicy
We were looking for something to bring up our Chicken Wing game when the idea to change the brine to infuse a different flavor profile. It was difficult work, batch after batch of our favorite Speckled Hen Farms free-range chicken wings had to be brined, grilled and shared with our taste testers. We’ve come up with a blend that works quite well.
A North Market Spices Original Blend
Dissolve contents of 6 oz package in 1 gallon of water. Add Wings, cover, and refrigerate for a day.
Makes an incredibly good Al Pastor marinade too. Use 1 gallon of pineapple juice instead of water. After marinating for at least 24 hours rub the pork with Sazon before cooking.

Salt, Flaked Chilies, Coriander, Bullion (dextrose, salt, rendered chicken fat, maltodextrin [from corn], modified cornstarch, vegetable oil [corn, soy, canola], onion powder, hydrolyzed soy protein, monosodium glutamate, natural flavoring, turmeric, disodium inosinate and disodium guanylate).
