Arrowroot, Powder
Arrowroot is a colorless, tasteless thickening agent used in sauces and gravies. It is a great alternative to flour for those who are gluten-free. Mix a slurry of arrowroot and cold water until smooth. Add to your sauce, gravy, or soup to thicken and add a glossy sheen. Coat the meat and tofu to create a crispy finish when pan-frying. Do not use in recipes with dairy; an unpleasant, slimy texture results.
Arrowroot powder can be substituted for flour thickeners at a ratio of one teaspoon of arrowroot powder for every one tablespoon of flour, and for cornstarch in most recipes at a ratio of two teaspoons of arrowroot powder for every one tablespoon of cornstarch.
