Saffron, Persian

Saffron is the most expensive spice in the world because of the time-consuming, manual labor involved. It takes about 80,000 crocus flowers to produce only a pound of saffron. It has a rich but subtle flavor. The bright red threads will turn a dish yellow/orange. It is good in rice, soups, and seafood dishes, and is essential to paella.

Persian Saffron is more earthly, aromatic, with a brighter red color.
